Since we are gluten intolerant at our house its hard to find fun, tasty treats that our bodies can tolerate. I often find myself ‘spluring’ and getting sick during this time a year because I can’t keep myself away from the sweets table filled with GLUTEN (*sigh*)
I have the perfect gluten free + toddler friendly Halloween treat.
It tastes like a dreamsicle!
I got this recipe by Lindsey Langhans from the KRAFT website and adapted it to fit our family’s needs.

What you will need for my adapted version:
1 box of Gluten Free chocolate cookies (about 30 cookies)
1/4 cup sugar
5 tablespoons butter or margarine (melted)
1 8oz package of PHILADELPHIA Cream Cheese (softened)
1 tub 8oz COOL WHIP topping (thawed + divided in 2)
2 cups boiling water
1 package large JELL-O ORANGE flavor
1/2 cup cold water
1 cup ice cubes
30 daily mini cups (found at TARGET near the plastic cups)
1st layer crust: Use a food processor to process your cookies into small crumbs.
(don’t worry about take the cream out!)
Mix cookie crumbs, sugar, and butter in large bowl.
Press mixture into the bottom of the mini cups, refrigerate until ready to use.
2nd layer cream: Beat cream cheese in a bowl, stir in 1/2 cool whip tub.
Spread gently over the cookie ‘crust’.
*You may need a paper towel to help clean the sides of the cup when putting this layer on.
It is possible to just use Cool Whip for this layer. You would miss out on the dreamsicle taste.
3rd layer JELL-O: Add boiling water to JELL-O mix, stir for 2 minutes until completely dissolved.
Add cold water and ice cubes, measuring a total of 1 1/2 cups. Stir JELL-O until slightly thick. Remove unmelted ice.
Spoon JELL-O over cream layer in the cups. (avoid filling to the top)
Place mini cup tops on each cup
Let set for 3 hours or until firm
After they have set, get ready to enjoy 🙂
*Traveling with a toddler isn’t always easy.
