I’ve always wanted to make my own homemade granola. The prices of store bought are outrageous! Not to mention the long laundry list of unnecessary ingredients. I was nervous to make it on my own, but I must say it’s just as good as the packaged stuff if not BETTER.
Trust me this is yummy, good for you, and easy!
2 1/2 cups old-fashioned rolled oats
3/4 cup raw cashews
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup pure maple syrup
1/4 cup melted coconut oil
1/4 teaspoon almond extract
Preheat oven to 300F degrees. Line a large baking sheet with parchment paper.
OPTIONAL: Run the cashews through a blender for 5 seconds. This easily breaks up the whole cashew.
Mix the oats, cashews, cinnamon, and salt in a large bowl. Set aside.
Melt 1/4 cup coconut oil in the microwave for about 45 seconds.
In a medium bowl, whisk the maple syrup and coconut oil together until combined. Whisk in the almond and vanilla extracts. Pour over the oats and toss to coat. Make sure ALL of the oats are moistened.
Now spread onto the prepared baking sheet and bake for 40 minutes, stirring halfway through. Allow granola to cool completely in the open air.

You don’t even have to be good at baking to make this! I’m kicking myself for not making it on my own sooner.
